Ten is a 10-course, 10-person BYOB restaurant meant to push Canadian food forward without pretension with inspired tasting menus. With the mindset of a pop-up and the resources of a fine dining restaurant, we hope to deliver a really special guest experience.
I have six years of experience, starting with culinary school in Calgary in 2011. After finishing my Red Seal certification, I spent six months working in kitchens in the South of France; first in Aigues-Morte, then in Lyon. After returning, I was offered a position at Grace in Chicago, the 3-Michelin Star mecca of fine dining. After a year there, I returned to Canada to join the team at Alo in Toronto, Canada's number-one ranked restaurant. While at Alo, I put on a series of one-night pop-up dinners. Recently I started work as a chef at Momofuku Daisho, which has afforded me more time and flexibility to test and hone the concept for Ten. I am eager to translate the energy and experience of my pop-ups into a permanent space in Toronto.
The funds raised from this Kickstarter will go toward equipment costs and leasehold improvements to a space in Toronto's Little Portugal neighbourhood. Any amount that you can donate is very much appreciated!
